Classic Winter Mushrooms on French Bread
January 12, 2015
Picked these mushrooms fresh from the garden and immediately used them for a dish we love that is simple, classic, and perfect for a cold winter night. We serve it over toasted French bread and pair it with a bigger-styled Pinot.

Pork Chops
May 8, 2018
Let’s cook! I’m told that I’m a decent cook (all men think they are great cooks), so I thought I’d share what I prepared for dinner as I tasted these wines and wrote these notes. I tend to keep it simple in the kitchen for this purpose - I just want to be sure I have something versatile so I can see how it works with a wide range of wines. So, I went with pork chops.
Root Vegetable Hash
December 3, 2014
It would be a little unfair to talk about the "Indigo Dreams" being perfect for bigger winter foods, but not include an appropriate recipe. We make this recipe a lot at this time of year- we use it as a "platform" for many meats and even fish, and with simple pan reductions to full sauces. If you prefer not to eat meat, skip the bacon and add a grilled Portabella mushroom on top. A poached egg on top is also delicious, and even just a dollop of sour cream makes it rich and earthy. Almost any way you approach it, it totally works with this wine.

Hors d’Oeuvres

Bacon-Wrapped Dates with Chorizo & Balsamic Glaze
September 29, 2017
This is one of my favorite little hors d’oeuvres. It is quick, easy to make and very popular. Be sure you prepare lots of them! The combination of sweet, spicy, salty and smoky makes this dish a great match for Holdredge Russian River Valley Pinot Noir.
